Easy (and Wholesome) Last Minute Family Meals for Back to School

Easy Family Meals

Our kids started back to school last week. I love everything about summer and the laid back routines; so getting back into a routine is much harder on me than it is for the kids. They thrive off routine and have been ready for school to start again. With school starting back that also means my schedule gets flipped upside down again and the juggling begins. PTA meetings, Open Houses, curriculum nights, Girl Scouts, and homework take up our afternoon and evening hours.

I try to be organized and plan meals for the week; but some nights are just too chaotic to try and cook a wholesome meal while juggling all the things! These are the nights that I’m thankful for ready to serve meals at the grocery store. I try to avoid fast food whenever possible; so the ready to serve meals gives us the opportunity to feed our kids a balanced dinner with very little prep.

Publix Ready to Serve Meals

Our favorite ready to serve dinners are Publix rotisserie chicken and sides. I’ll stop at the store on the way home from school and pick up the pieces that we need to complete the dinner. Tonight that included Greenwise rotisserie chicken, premade mac and cheese, dinner rolls, vegetables and Dasani water. It takes less than 10 minutes to toss everything in the microwave to heat them up and we can all sit down at the table together.

Coca Cola Makes Back to School Meals Easy

Then it’s time to do homework and any after school activities we have planned. We try not to over schedule ourselves but it’s unavoidable when you have kids in two different schools, activities and sports. There’s usually only one night each week that ends up being a little chaotic; but I’m thankful for stores who understand parents busy schedules by making easy dinner solutions.
