Summer is in full swing in our house and I’m TRYING to eat more healthy. At the end of May I started a 21 Day Fix “diet” through a friend of mine to help me kickstart some weight loss. I hate the word “diet” because that makes you feel “fat” and I still don’t feel fat even though I’m not my ideal weight. I’ve gotten into some bad eating habits and I really just needed to refocus my priorities and start making better choices. Our family is plagued with heart disease and I am not getting any younger. Plus my kids need to start seeing me make better choices so that they won’t have to struggle so much as they get older.
For almost an entire month I’ve given up dairy, coffee (WOW), breads, pastas, rice, and processed foods. I’ve been focusing on whole fresh foods; which means a lot of salads. I’ve slowly started to add back some dairy in the form of yogurt a few times a week. Aside from that most of the changes are becoming second nature. I allow myself one day a week where I “cheat” if I feel like it. That’s usually reserved for when we go out to eat…and even then I’ve been choosing salads more regularly.
Salads can get boring unless you start playing with different ingredients and dressings. This is a recipe I’ve played with a few different ways this month and when I added yogurt back I knew that it would make this dressing a little more fun! You probably already have all the ingredients you need in your kitchen. Taylor Farms Power Greens Wellness Blend salad mix, lettuce, chicken, raisins, apples, walnuts, and a Stonyfield Organic Greek Yogurt (Vanilla Bean) dressing using apple cider vinegar and maple syrup. That’s it!!! Super simple and very easy to make.
- Taylor Farms Power Greens Wellness Blend Salad Mix
- Grilled or Baked Chicken
- Stonyfield Organic Greek Yogurt (Vanilla)
- Apple Cider Vinegar
- Maple Syrup
- To the salad mix add chopped chicken, fruit, and walnuts.
- To make the dressing mix 1 cup yogurt, 1 tbs apple cider vinegar, and 1 tbs maple syrup and shake well.
- Toss all the ingredients in the bowl and serve chilled.
I felt like I was eating dessert it was so good! I only used about a tablespoon of dressing and had enough made up for the rest of the week. I had to make a second bowl because my youngest decided she wanted to share my salad with me. I love that she likes to mimic me and eats healthy without even knowing that it’s good for her. Plus I had enough yogurt leftover to have a small bowl mixed with oats for breakfast the next day.
