I was sent a sampling of R.W. Knudsen vegetable juices this month as part of their blog ambassador program and was scared that I’d never end up using them. I’ve never been a fan of vegetable juices by themselves, so I decided to try to use them in other recipes to hide some vegetables from my kids. I was really surprised at how well they worked with some of our favorite recipes.
We received Tomato Red Bell Pepper juice, Tomato Sriracha and Carrot juice. All of the juices are organic and only have 2-3 ingredients. Did I mention that these juices were a little intimidating to me? These are not things that I would normally add to my grocery cart.
Since my Instant Pot (IP) has become my new best friend, it’s only natural that my favorite recipes were ones cooked in the IP. The key with most IP recipes is that you need a liquid to create steam and pressure used in cooking the meal. Instead of using water, vegetable juices can be use and will add a more savory flavor to your recipe.
Tomato Red Bell Pepper was a great addition to our salsa chicken in the Instant Pot. For this meal I placed 2 chicken breasts in the IP with 1 cup of tomato juice and 1 cup of black bean salsa. I closed the pot and cooked it for 10-12 minutes on steam and released it naturally. The chicken will shred with a fork and tastes great over yellow rice. My kids love this meal.
A few days later my parents were watching the kids so that I could go out for the night with some friends. I left them directions on how to use the IP to make some chili. The first step is to cook the beans for 45 minutes in the IP. I’ve fallen in love with the Hurst’s HamBeens Slow Cooker Chili beans that I found at Publix. This is a 2 part recipe since the beans need to be cooked for longer than the stew meat. Once the beans are done, I drain the water and set the beans aside. Next I’ll saute the stew meat and add 2 cups of Tomato Red Bell Pepper juice instead of tomato paste or sauce. I also add some of the season packet that comes with the beans. I usually only cook half of the pack of beans unless I want to eat it for several days. Once all of the ingredients are in the IP I set the timer to 10 more minutes on chili. They said this one came out great but they didn’t leave me any to try!
The next recipe that I’ll make later this week is a homemade tomato soup. I want to use both the carrot and the tomato sriracha juices for the soup with a heavy cream. Top that with some shredded cheese and serve with a grilled cheese sandwich! I canNOT wait to try this one.
