Breakfast for Dinner – Apple Ginger Oatmeal

There are some nights when I just don’t feel like preparing a full family meal. Tonight was one of those nights so I decided we were going to do breakfast for dinner. A nice hearty bowl of oatmeal was just what we needed to fill us up on a lazy Friday family night.

Even though it’s still in the 90’s here in Florida, it’s starting to feel like Fall in other regions. Most people crave all that pumpkin spice everything, but Fall for me means I crave apple everything. I received a bottle of Apple Ginger juice from R.W. Knudsen as part of their blog ambassador program so I decided to use it when making my oatmeal. I have to say that it was a GREAT decision. The kids both asked for a second bowl.

Apple Ginger Oatmeal

I used steel cut oats for the first time and they are a much sturdier oat than regular quick oats. You can cook them on the stove, slow cooker, or my favorite, in an Instant Pot. Cooking times will vary depending on which cooking method you choose.

Ingredients:

  • 1 cup steel cut oats
  • 2-3 cups R.W. Knudsen Apple Ginger juice
  • Toppings of your choice (peaches, apples, blueberries, cinnamon, caramel sauce, etc)

Steel Cut Oatmeal

For stove top: Add oats and juice, cover and cook for 10-20 minutes depending on your desired consistency. When it’s done cooking top with your favorite toppings.

For slow cooker: Coat the slow cooker with coconut oil or butter to prevent the oats from sticking. Add oats and juice, cover and cook on low for 7-8 hours. Add your favorite toppings and enjoy.

Steel Cut Oatmeal

For instant pot: Coat the slow cooker with coconut oil or butter to prevent the oats from sticking. Add oats and juice directly to the instant pot. Set the porridge option to 10 minutes and close the lid. Allow the pressure to release naturally (unless your too impatient like me). Add your favorite toppings and enjoy.

The entire family devoured the oatmeal and asked for seconds. I had made enough that I had breakfast for the next 2 days. It’s great served warm with a little vanilla yogurt and fresh peaches. It’s so good that the kids will think they are eating dessert. I loved using the R.W. Knudsen Apple Ginger juice because it sweetened the oatmeal without adding any extra sugar. The juice would be great served warm in the Fall with a cinnamon stick!!
