Avocado, Lime, Banana Yogurt Smoothies

Avocado Lime Banana Smoothie

What could say summer more than a refreshing tropical smoothie?  I’ve always been an avocado junkie (seriously, I could live off these things) but my love was revitalized last week when I saw a friend of mine post a recipe about Tropical Avocado Popsicles.  They just looked absolutely delicious.  Today on my trip to the grocery store I filled my shopping cart with a few ingredients that I was craving; avocados, limes, bananas, and some Smooth & Creamy Vanilla Stonyfield yogurt.  My intention was to make some avocado push pops using some new molds we found at the store last week.  My daughter has been DYING to use them.

My little chef wanted to help in the kitchen too so I let her add all the ingredients to the blender and control the buttons!  I love that she enjoys being in the kitchen with me.  After we filled up our 4 push pops (recipe coming tomorrow) she begged me to drink the leftovers!  Instead, we added a few more ingredients and made the mixture a little thicker for a smoothie.

The result was a very refreshing mix of avocado, lime, and bananas (with just a few strawberries because she insisted) smoothie that was perfect for beating today’s Florida heat.  It was so refreshing I added a splash of my favorite coconut rum to mine for an adult cocktail.  Both kids drank them down so quickly I didn’t even have time to clean up the kitchen!  While we did add a few strawberries; they are not necessary at all.

A refreshing tropical smoothie featuring avocado, lime, and bananas. Perfect for a summer day!

Ingredients
  • 1 Avocado
  • 1 Banana
  • Juice from 1 Lime
  • 16 oz of Stonyfield Vanilla Smooth & Creamy organic yogurt
  • Handful of ice cubes
Instructions
  1. Add meat of avocado to blender.
  2. Add banana to blender.
  3. Squeeze the juice from one fresh lime in blender.
  4. Add 16 oz of vanilla yogurt to blender.
  5. Add ice cubes to desired consistency.
  6. Blend on high until all ingredients are properly blended.
  7. Pour and drink!

If you’re on Instagram you’ve already seen a sneak peek at the avocado, lime, banana push pops that use essentially the same recipe.  It was too late in the day to get a good picture before they were frozen so I saved the final push pop in the freezer for tomorrow.  We may just fight over who gets to eat it when I’m done!  Come back here to find out what our secret ingredient was.
