Yesterday was the last day of school for the kids and it’s officially summer break! We celebrated the end of the school year with a pool party for my kids and their friends; and the adults sat around and reflected on how fast they are growing up. Today we have relaxed around the house and haven’t done much. I’ve had to work all day so the kids have been really bored, but I did stop for an afternoon swim and to make some yummy treats with them.
Since it’s hot outside and it’s summer I decided we’d make some frozen yogurt bites for when they are done with their afternoon swim. I almost always have Stonyfield yogurt in the refrigerator.
Stonyfield Frozen Granola & Yogurt Bites #SummerCravings
Supplies needed:
- Stonyfield Whole Milk Greek Yogurt – Vanilla Bean
- Fruit Juice (your choice of flavors)
- Granola
- Muffin tin or mini-muffin tin
Directions:
In a small bowl, mix 2 cups of yogurt with 1/4 cup of fruit juice. Place a thin layer of granola in the bottom of each muffin tin and pour the yogurt mixture on top. Smaller and thinner bites will be easier to bit when frozen so you may not want to fill the tins to the top. Freeze for 2-3 hours until frozen. They can be served frozen! For more fun, add chopped fruit to the yogurt tins.
Tip: Fill a cookie sheet with hot water and place the frozen muffin tin in the water so that the bottom 1/2″ of the tin will be warmed. Yogurt bites will easily pop out of the muffin tin after 2-3 minutes. Wrap in parchment paper and refreeze until ready to eat.
It’s been a much longer day than I anticipated and I have a few more projects that I need to finish, so I enjoyed a cup of coffee while the kids swam and nibbled on their frozen yogurt bites.
